Greek Summer Salad 600x450 Greek Summer SaladMy favorite Greek God after Nia Vardalos is Dionysus. He is the god of wine, parties, festivals, madness, drunkenness, and pleasure. And my personal hero. Why would anyone want to be any other god? Imagine being the god of wine and parties?  You would get some Greek Saganaki every night. The Greeks claim to be the creators of all these wonderful dishes in Eastern Europe, but tell any Eastern European that and you will most likely get captured and sold to some Arab prince as his sex slave for the rest of your life. A dream for some of my friends, but a nightmare for most.

This is a nice simple, light, and refreshing summer salad. It’s not Greek, but just slightly influenced by them.  Great for summer picnics!
