Usually when I see chicken parmigiana at a restaurant I suddenly feel like I’m at a diner or pizza shop. My cousin, lets call him Nek to protect his identity, is obsessed with chicken parm. Any restaurant we went to, that was the only thing Nek would order. It drove me nuts. He grew up in the south, so I always attributed his lack of sophistication to his geography. I know, I’m an asshole.

Years later, he moved to New York and opened two amazing restaurants and neither of them serve chicken parm, it’s also something I vowed to never make for him.

A few years ago, he called me up to tell me about this girl he was dating and he wanted me and my sister to meet her. I was so excited! Who could this mystery girl be? He asked if I could make him chicken parm and I was so happy he wanted to introduce his new friend to us, I agreed. Oh, lets call her Lav to respect her privacy.

So they came over, we ate, drank and my sister and I told funny and embarrassing stories about Nek. Lav thought we were hilarious and loved the chicken parm so much that she agreed to marry Nek a few years later. Have you ever had a friend, and for some reason they have the coolest friends, so you hang out with your annoying friend just to see their friends and you’re constantly wondering why the hell are they friends with this person? Well, I’d like to think that this is the same situation here. It’s not, they’re pretty awesome and both love me. It has now become tradition that once a year we all get together, eat chicken parm, and share stories about how great I am.

This is for one package of thin chicken breasts – about 4 pieces; it will feed about 3 people.

Recipe: Chicken Parmigiana

Ingredients

  • 1 Package Thin Chicken Breast (about 1 pound)
  • 1 Cup of Flour
  • 3 Eggs
  • 1 10.5 oz package of Panko Breadcrumbs (Japanese)
  • 2 Cups of Peanut Oil
  • 2 Cups of Tomato Sauce
  • 1/4 Pound sliced Monterey Jack Cheese (from the Deli counter)
  • 1/4 Pound sliced Mozzarella Cheese (from the Deli counter)
  • 3 Teaspoons of Salt
  • 1 1/2 Teaspoons of Black Pepper

Instructions

  1. Take 2 plates and 1 bowl and lay them out on the counter as plate, bowl, plate. Put the flour in first plate and the breadcrumbs in the third. In the bowl beat the 3 eggs. Mix 1 teaspoon of salt and 1/2 teaspoon of black pepper in the flour, eggs and breadcrumbs.
  2. Put the oil in a pan and turn on the heat to medium. As the oil is heating, take a piece of chicken and put it in the flour and cover the entire chicken. Take it out and shake it to get all the extra flour off the chicken. Dip the chicken in the egg mixture and than lay it on the breadcrumbs and scoop some from the sides and put it on top of the chicken. Apply a bit of pressure on top to get the breadcrumbs to stick.
  3. When the oil has heated (drop a few pieces of bread crumbs to see if it sizzles) add one or two pieces of chicken. The oil should be hot and bubbling, if it’s not turn up the heat a bit. Let it cook for 2 minutes and flip over. You want the chicken to be a light golden color, not dark brown. It will finish cooking in the oven. After two minutes take the chicken out and rest on paper towels to drain. Keep repeating until you’ve run out of chicken.
  4. Once you’ve fried all your chicken, preheat your oven to 350. Lay all your chicken pieces on a baking dish and spoon over some tomato sauce. You want to cover the entire piece of chicken. Add one slice of Monterey Jack cheese and one slice of Mozzarella cheese. Bake for about 20 – 25 minutes until the cheese is bubbling and slightly browned. Serve with pasta and sauce
