Proteins bars suck. They’re bland, expensive and make me constipated. I’ve tried the bars, shakes, goo and powders and can never commit to them for very long. I needed an alternative and wanted to create something that will actually fill me up without a chalky aftertaste.

I created this dish trying to create a healthy protein rich meal that was quick to make that a good mixture of carbs and protein. You can really add anything vegetable you want. I usually have peas in the freezer or some corn in a can. If I’m really lazy, I’ll just get a pint of steamed rice from the Chinese restaurant for $1 on my way home from the gym. The slivered almonds add a great texture and flavor, so I strongly suggest you don’t skip them. You don’t really need to measure any of these ingredients, but here is a base for you.

Recipe: Chicken Stir Fry – Bar Replacement Meal

Ingredients

  • 1/2 cup leftover Chicken pieces (chopped or shredded)
  • 2 tablespoons Olive Oil
  • 1/3 cup diced White Onions
  • 2 cloves of minced Garlic
  • 1/4 cup blanched Slivered Almonds
  • 1/ 4 cups of Pine Nuts.
  • 1/2 cup frozen Peas
  • 1/2 cup cooked Rice (white or brown)
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 2 beaten Eggs
  • 2 tablespoons Soy Sauce

Instructions

  1. Add the onions and oil in a pan and cook over medium/low heat for 5-7 minutes, until the onions are translucent. Add the garlic and cook for another minute. Raise the heat to medium and add the chicken, almonds and pine nuts. Cook for another minute and stir in the peas. Keep mixing for another minute; you want them to sizzle a bit. Add the rice, salt and pepper and keep mixing. You want to get the rice warm. It should take about 1 – 2 minutes. Pretend you’re one of those Chinese guys in the restaurant and keep mixing briskly. Add the soy sauce and mix some more. Now, turn the heat up a bit to medium/high and clear some the rice to the side to create small circles where you can see the pan. Almost like creating a well for the beaten eggs. Pour a third of the egg mixture in the well and use a fork and whisk the eggs while your bring in some of the rice from the sides. Mix everything together and repeat. You’re almost trying to create scrambled eggs with rice in that little well. Mix everything again and keep doing the same thing until you have finished with the eggs.
